  1. Preheat the oven

    Turn the oven on to 180°C (thermostat 6).

  2. Peel the potatoes

    Peel the potatoes and cut them into thick 5 mm slices. Set aside.

  3. Cut the cauliflower

    Wash the cauliflower, break off the florets and cut them into pieces about the same size as the potatoes. Set aside.

  4. Cook the vegetables

    Bring 50 cl of salted water to a boil in the saucepan. Add the potatoes and cauliflower florets. Cook for 10 min over medium heat. Drain well.

    Tip · To drain without breaking up the vegetables, give the saucepan a gentle shake before tipping it into the colander.
  5. Make the béchamel

    Melt the butter in the skillet over low heat. Add the flour and stir for 1 min to make a roux. Add the milk little by little, whisking to avoid lumps. Let it thicken for 5 min over very low heat. Season with salt and pepper.

  6. Assemble the gratin

    Arrange the potatoes and cauliflower in the baking dish. Cover with the béchamel. Sprinkle with half the shredded cheese.

    Tip · For a crispier gratin, slide it under the broiler for 2 min at the end.
  7. Bake

    Bake at 180°C for 15 min. Add the rest of the cheese and bake 5 min more until golden on top.
