How long does this vegetarian meal prep really take?

Two hours on the clock on Sunday, oven and stovetop going at the same time. On weekdays, it's ten minutes per meal on average, and five for the lunches that just need putting together.

Does everything keep until Friday?

Not in the fridge: a prepared dish keeps two days there, according to ANSES (the French food safety agency), which recommends eating it within three days. So whatever gets eaten from Wednesday on goes in the freezer on Sunday, and comes out the night before, into the fridge. The chili, the dal and the simmered legumes keep really well there.

How do you make a weekly menu?
