Step-by-step recipe

  1. Preheat the oven

Turn the oven on to 180 °C (convection if you have it).

  2. Prep the leeks

Trim the ends of the 2 leeks, split them lengthwise, rinse well between the layers, then slice them into rounds.

Tip · Rinse the sliced leeks in a colander under running water, dirt hides between the layers.
  3. Sweat the leeks

Heat a little cooking fat in the skillet over medium-low, add the leeks with a pinch of salt and let them soften 8 to 10 min, stirring, until tender.

Tip · Keep the heat low and don't let the leeks brown. They should be soft and well drained so they don't make the crust soggy.
  4. Line the pan

Unroll the pie crust into the dish with its paper and prick the bottom all over with a fork.

  5. Make the filling

In the mixing bowl, whisk the 2 eggs with the crème fraîche and milk. Season lightly with salt and add pepper.

  6. Fill the quiche

Spread the leeks over the crust, crumble the 75 g of goat cheese on top, then pour in the egg mixture.

  7. Bake the quiche

Bake at 180 °C for 30 min, until the filling is set and golden. The eggs shouldn't jiggle in the center anymore.

  8. Make the salad

Wash the 100 g of salad greens, spin them dry and put them in a serving dish. Dress with a drizzle of oil, a pinch of salt and pepper right before serving.

  9. Serve

Let the quiche rest 5 min out of the oven, then slice it and serve with the salad.

And there you go, it's readyCheck off every step to celebrate.
