  1. Preheat the oven

Turn the oven on to 180 °C (gas mark 6).

  2. Prep the leeks

Wash the leeks and trim off the ends and the tough green parts. Slice them thinly into rounds.

  3. Cook the leeks

Heat a drizzle of olive oil in the nonstick skillet over medium heat. Add the leeks and cook for 5 min without letting them brown.

Tip · To keep the leeks from sticking, stir them regularly with a wooden spatula.
  4. Cook the bacon

Add the lardons to the leeks and brown them for 3 min over medium heat. Salt lightly.

  5. Roll out the dough

Trim the pie dough so it hangs a little over the edge of the pie pan. Prick the bottom with a fork.

  6. Make the quiche filling

In a bowl, beat the eggs with the crème fraîche. Season with salt and pepper. Add half the goat cheese, diced.

  7. Fill the tart

Spread the leeks and lardons over the dough. Add the quiche filling on top. Sprinkle with the rest of the cheese.

  8. Bake the quiche

Bake the quiche at 180 °C for 25 min, until golden and puffed.

  9. Prep the avocado

Peel the avocado, remove the pit and dice the flesh. Drizzle with lemon juice so it doesn't turn brown.

Tip · If you don't have a lemon on hand, a little cider vinegar does the trick.
  10. Make the salad

Toss the diced avocado with a drizzle of olive oil, and season lightly with salt and pepper.
