Step-by-step recipe

  1. Peel and cut

Peel the sweet potatoes and cut them into 2 cm cubes. Peel and finely chop the onion and garlic.

Tip · If the sweet potatoes aren't tender enough after 15 min, give them 5 more min without adding water.
  2. Cook the onions

In the nonstick skillet, heat the coconut oil over medium heat. Add the onion and garlic and cook for 3 min without browning.

  3. Add the tomato paste and curry

Stir in the tomato paste and curry powder. Mix well for 1 min to coat the onions.

  4. Add the lentils and sweet potatoes

Pour the red lentils and sweet potato cubes into the skillet. Stir to coat them in the mix.

  5. Add the coconut milk

Add the coconut milk and 20 cl of water. Bring to a boil, then turn the heat down and let it simmer, covered.

  6. Cook over low heat

Let it cook for 15 min over low heat, stirring now and then. The lentils and sweet potatoes should be tender and the liquid reduced.

  7. Adjust the seasoning

Taste and adjust with salt and pepper to your liking. If it's too thick, add a little hot water.

Tip · Serve with basmati rice for a full meal.
  8. Let it rest

Turn off the heat and let it rest for 5 min, covered, before serving.

And there you go, it's readyCheck off every step to celebrate.
