Step-by-step recipe

  1. Prep the vegetables

Peel and slice the onion, then chop the garlic and ginger. Peel the sweet potatoes and cut them into 2 cm cubes. Rinse the lentils in the colander.

  2. Sauté the onion

Heat the olive oil in the saucepan over medium heat and add the onion with a pinch of salt. Sauté, stirring, until translucent.

  3. Add the garlic and ginger

Add the garlic and ginger to the saucepan and stir without letting them brown.

  4. Toast the curry powder

Add the curry powder to the saucepan and stir for 30 seconds so it releases its aroma.

  5. Add the lentils and sweet potatoes

Add the lentils, sweet potatoes and 50 cl of water to the saucepan. Stir and bring to a boil.

Tip · Don't salt the lentils too early on top of the salt in the onion, and check them at the end: they should hold their shape but be soft.
  6. Cook, covered

Turn the heat down to low, cover and let it simmer for 25 min, until the lentils are tender. Stir now and then and add a little water if it sticks.

  7. Add the coconut milk

Add the 20 cl of coconut milk, stir and heat for 3 min over low heat without boiling hard. Mash a few pieces of sweet potato against the side to thicken.

Tip · If the dal is too thick, add a small splash of hot water. It thickens as it cools.
  8. Season and serve

Taste, adjust with salt and pepper, then serve piping hot.
