Step-by-step recipe

  1. Prep the vegetables

Peel the onion and cut it into small dice. Peel the sweet potato and cut it into 2 cm cubes, chop the garlic, then peel and grate or finely chop the ginger.

  2. Sauté the aromatics

Heat the olive oil in the saucepan over medium heat, add the onion with a pinch of salt and sauté, stirring, until translucent.

  3. Add the garlic, ginger and curry powder

Add the garlic, ginger and the 2 tsp of curry powder, then stir constantly so they don't burn.

  4. Add the lentils and sweet potato

Rinse the green lentils under cold water, then add them to the saucepan with the sweet potato cubes. Stir to coat them well in the spices.

  5. Cover with water and simmer

Add about 60 cl of water, bring to a boil, then turn the heat down to low and cover. Let it simmer until the lentils are tender, stirring now and then.

Tip · If the dal sticks or gets too thick before it's done, add a small glass of water, and don't salt too early, before the lentils are tender.
  6. Add the coconut milk

Add the 20 cl of coconut milk, stir and let it heat over low heat with the lid off. Mash a few sweet potato cubes against the side to thicken.

  7. Season and serve

Taste, adjust with salt and pepper, then serve hot in two shallow bowls.

Tip · Finish this dal with a little freshly ground pepper; it's even better reheated the next day with a splash of water.
