  1. Prep the vegetables

    Peel the sweet potatoes and cut them into 2 cm cubes. Peel and slice the onion, then crush the 2 garlic cloves.

  2. Sauté the onion

    Heat 1 tbsp of olive oil over medium heat in the skillet. Add the onion with a pinch of salt and sauté until translucent.

  3. Add the garlic and curry powder

    Add the garlic and the 2 tsp of curry powder. Stir nonstop, otherwise the garlic burns and turns bitter.

  4. Cook the sweet potatoes

    Add the sweet potato cubes and 10 cl of water. Cover and let it simmer over medium-low heat, stirring now and then.

    Tip · If the skillet dries out before the sweet potatoes are tender, add a small splash of water.
  5. Prep the spinach

    Meanwhile, wash the 150 g of spinach and roughly chop it. Drain and rinse the chickpeas in the colander too.

  6. Add the chickpeas and coconut milk

    Once the sweet potatoes are tender when poked with a knife, add the chickpeas and the 20 cl of coconut milk. Let it simmer over low heat, uncovered.

  7. Wilt the spinach

    Add the spinach a handful at a time and stir until it cooks down. Season with salt and pepper, taste and adjust.

    Tip · The spinach releases water, so only salt at the end. Serve with rice or bread if you have some.
