  4. Add the curry powder and chickpeas

    Sprinkle the curry powder over the onions and garlic and stir well for 30 seconds. Add the drained chickpeas and sauté for 2 min, stirring to coat them in the mix.

  5. Pour in the coconut milk

    Pour the coconut milk into the skillet, stir and let it simmer over low heat for 5 min, stirring now and then. Season with salt and pepper to taste.

  6. Stir in the spinach

    Divide the cooked rice between plates and spoon the chickpea and spinach curry over it. Serve right away.
