  1. Chop the onion

    Peel the onion and cut it into small dice. Keep the cutting board and knife for the garlic next.

  2. Chop the garlic

    Peel the garlic cloves and chop them finely. Use the same board and knife as for the onion.

  3. Sauté the onions

    Heat the olive oil in the skillet over medium heat. Add the diced onion and sauté for 3 minutes without browning.

    Tip · To keep the garlic from burning, add it after the onions have cooked for 2 to 3 minutes.
  4. Add the garlic and curry powder

    Add the chopped garlic and curry powder to the skillet. Stir well and cook for 1 minute to release the aromas.

  5. Rinse the lentils

    Rinse the green lentils under cold water in the colander to wash off any grit.

  6. Cook the lentils

    Put the rinsed lentils in the saucepan with 50 cl of cold water. Bring to a boil, then lower the heat and let them simmer, covered, for 25 minutes. Salt lightly as they cook.

    Tip · Green lentils should stay slightly firm to the bite. If they get too soft, they'll turn to mush.
  7. Add the spinach and coconut milk

    Once the lentils are cooked, add the washed fresh spinach and the coconut milk to the saucepan. Stir well and let it heat for 5 minutes over low heat.

  8. Adjust the seasoning

    Taste and adjust the salt and pepper to your liking. If the mix is too thick, add a little hot water.
