  1. Prep the veggies

    Peel and thinly slice the 2 onions. Peel and mince the 4 garlic cloves. Drain the chickpeas in the colander.

  2. Cook the onions

    Heat the 2 tbsp of olive oil over medium heat in the sauté pan. Add the onions with a pinch of salt and brown them, stirring.

  3. Add the garlic and curry

    Add the minced garlic and the 2 tsp of curry powder. Stir for 1 minute until it smells amazing.

  4. Warm up the chickpeas

  5. Wilt the spinach

    Add the 300 g of spinach a handful at a time and stir until it wilts.

  6. Pour in the coconut cream

    Pour in the 200 ml of coconut cream and season with salt and pepper. Let it simmer over low heat, stirring now and then, until the sauce thickens a little.
