Step-by-step recipe

  1. Peel the potatoes

Peel the potatoes and cut them into big cubes. Put them in the saucepan with cold salted water.

  2. Cook the potatoes

Bring the water to a boil, then lower the heat and let them simmer 15 min until tender.

  3. Prep the zucchini

Wash the zucchini and cut it into small cubes, skin on. Finely slice the onion.

  4. Sauté the veggies

In the skillet, heat the olive oil over medium heat. Add the onion and cook it 2 min without browning. Add the diced zucchini and cook 5 min, stirring.

  5. Mix in the lentils

Drain the canned lentils and add them to the zucchini in the skillet. Mix well and let it heat through for 2 min over low heat. Salt and pepper.

  6. Mash the potatoes

Drain the cooked potatoes and mash them with a fork with the milk, half the butter, salt and pepper.

Tip · To keep the mash from getting too runny, mash the potatoes while they're still hot and add the milk little by little.
  7. Build the pie

Preheat the oven to 200°C. Spread the lentil and zucchini mix in two small baking dishes or one big one. Cover with the mashed potatoes. Smooth the top with a fork.

Tip · If you don't have baking dishes, use a pie pan or an oven-safe skillet.
  8. Bake until golden

Dot the top with the rest of the butter and sprinkle with the shredded cheese. Bake for 10 min until the top is nicely browned.
