  1. Preheat the oven

    Turn the oven on to 180 °C, convection or regular. Lightly butter or oil the baking dish.

  2. Prep the vegetables

    Wash the 2 zucchini and peel the 2 carrots. Cut the zucchini into small dice and the carrots into thin rounds or small dice.

  3. Precook the vegetables

    Bring salted water to a boil in the saucepan and drop in the carrots for 5 minutes. Add the zucchini and cook 3 minutes more, then drain well in the colander.

    Tip · Drain the vegetables really carefully, leaving them in the colander for a few minutes. Any leftover water would make the bake runny and it wouldn't set.
  4. Make the custard

    In the mixing bowl, beat the 6 eggs with the 40 cl of milk, the 60 g of crème fraîche, the nutmeg, salt and pepper. Whisk until fully combined.

  5. Assemble in the dish

    Spread the well-drained vegetables over the bottom of the baking dish. Gently pour the egg mixture over them.

  6. Bake

    Bake at 180 °C for 30 minutes, until set and lightly golden. A knife stuck into the center should come out clean.

    Tip · If the top browns too fast before the center is set, cover the dish with a sheet of aluminum foil or turn the oven down to 160 °C. Serve with a green salad.
  7. Let it rest

    Take the dish out of the oven and let the bake rest a few minutes before cutting it into slices.
