  1. Preheat the oven

    Turn the oven on to 220 °C on convection and line the baking sheet with parchment paper.

  2. Cut the veggies

    Wash the zucchini and bell peppers, then seed the peppers. Cut everything into roughly 2 cm pieces.

  6. Fluff the couscous

    Add 1 tbsp of olive oil to the couscous and fluff it with a fork until it's light.

  7. Crumble the feta

    Crumble the 100 g of feta into the bowl with a fork.

  8. Assemble and serve

    Divide the fluffed couscous between two plates, pile the roasted veggies on top, then sprinkle with the feta. Add pepper to taste.
