Step-by-step recipe

check things off as you go
  1. Prep the veggies

Peel and slice the onion. Cut the zucchini (300 g) into small dice. Drain and rinse the chickpeas (200 g).

  2. Make the broth

Bring 250 ml of water to a boil in the saucepan and dissolve the veggie bouillon cube in it.

  3. Soak the couscous

Pour the whole wheat couscous (200 g) into the mixing bowl, cover it with the boiling broth, cover the bowl and let it sit without stirring.

Tip · Pour in all the broth at once, cover and don't touch the couscous while it sits, otherwise it turns gluey.
  4. Sauté the onion

Heat the olive oil (2 tbsp) in the skillet over medium heat. Add the onion and cumin (1 tsp) and sauté, stirring.

  5. Cook the zucchini and chickpeas

Add the zucchini and chickpeas to the skillet, then season with salt and pepper. Cook over medium-high heat, stirring, until the zucchini is tender and lightly browned.

Tip · Don't stir the zucchini too much at first so it browns instead of releasing its water.
  6. Mix and serve

Fluff the couscous with a fork, add the veggies and chickpeas, mix well and serve hot.
