  1. Chop the red onion

Peel the red onion and dice it finely with the knife.

  2. Cook the onion

In the nonstick skillet, heat 1 tbsp of olive oil over medium heat. Add the diced onion and cook for 3 min without browning.

  3. Add the chickpeas

Add the drained chickpeas to the skillet with the onion. Warm them for 2 min, stirring to mix well.

Tip · If the chickpeas look too dry, add a splash of water so they don't stick while cooking.
  4. Add the couscous

Add the whole wheat couscous to the skillet with the chickpeas and onion. Stir well to coat the couscous with the oil and flavors.

  5. Add the water

Add 250 ml of hot water to the skillet, then add a pinch of salt and the cinnamon. Stir and bring to a boil.

  6. Cook the couscous covered

Cover the skillet and cook the couscous over low heat for 10 min, stirring now and then so it doesn't stick.

Tip · For a softer texture, let the couscous rest for 2 min, covered and off the heat, before adding the raisins.
  7. Stir in the raisins

Turn off the heat and add the raisins to the skillet. Stir well to spread them evenly through the couscous.

  8. Top with parsley

Roughly chop the fresh parsley and sprinkle it over the dish. Give it one last stir.
