  1. Cook the bulgur

Add the bulgur to the saucepan with 300 ml of boiling salted water. Cover and let it cook over low heat for 10 minutes. Turn off the heat and let it rest, covered, for 5 minutes.

  2. Prep the veggies

Peel the red onion and cut it into thin slices. Cut the eggplant and zucchini into 2 cm cubes. Set aside.

  3. Grill the veggies

Heat 1 tablespoon of olive oil in the skillet over medium heat. Add the onion and cook for 3 minutes. Add the diced eggplant and zucchini and season lightly with salt. Cook for 8 to 10 minutes, stirring now and then, until they're tender and lightly browned.

Tip · To keep the veggies from sticking, don't crowd the skillet. Cook them in two batches if needed.
  4. Drain the chickpeas

Open the can of chickpeas and tip them into a colander. Rinse them under cold water to get rid of the extra salt and canning liquid.

  5. Put the salad together

In a bowl, mix the drained bulgur, the drained chickpeas, the grilled veggies and the onion. Add the juice of half a lemon and 1 tablespoon of olive oil, then season with salt and pepper. Mix well.

Tip · If you like a tangier taste, add a little more lemon juice or some grated zest.
  6. Serve the salad

Taste and adjust the seasoning if needed. Serve right away or chill for 10 minutes before serving.
