  1. Drain and rinse the lentils

    Open the 2 cans of green lentils, pour them into the colander and rinse them under cold water. Let them drain well, then tip them into the mixing bowl.

    Tip · Let the lentils drain for a few minutes in the colander, giving them a shake, otherwise leftover water waters down the vinaigrette.
  2. Dice the tomatoes

    Wash the 4 tomatoes, remove the stems and cut them into small dice. Add them to the mixing bowl.

  3. Slice the red onion

    Peel the red onion and cut it into thin slices. Add it to the mixing bowl.

  4. Make the vinaigrette

    In the small bowl, mix 2 tbsp of cider vinegar, 2 tsp of whole-grain mustard, salt and pepper. Add 2 tbsp of olive oil while whisking with a fork until smooth.

  5. Dress the salad

    Pour the vinaigrette over the lentils, tomatoes and onion. Toss well, then crumble the 100 g of feta on top.
