  1. Cook the red lentils

    Pour the 160 g of lentils into a saucepan with about 40 cl of cold water, so 2 to 3 times their volume. Bring to a simmer and cook over medium heat 8 to 10 min, keeping an eye on them: they should be tender but whole.

    Tip · Red lentils fall apart fast: stir only once or twice, gently, and stop cooking as soon as they're tender.
  2. Drain and cool

    Tip the lentils into the colander and let the leftover water drain off well. Then move them to the mixing bowl and let them cool a bit.

    Dice the 3 tomatoes small and finely slice the red onion. Add them to the mixing bowl.

  4. Drain the tuna

    Open the 2 cans of tuna and drain them well. Flake the tuna into the mixing bowl with the lentils.

  5. Chop the parsley

    Pick the leaves off the bunch of parsley and chop them fine. Add them to the mixing bowl.

  6. Season and toss

    Add the 2 tbsp of olive oil, the tbsp of balsamic vinegar, salt and pepper. Toss gently so you don't crush the lentils, then divide between 2 plates.
