  1. Slice the onion

Set the cutting board on the counter. Peel the red onion and cut it into thin slices with the knife.

  2. Cut the tomatoes

Wash the tomatoes under cold water. On the cutting board, dice them, cutting away the tough parts.

  3. Heat the oil

Set the nonstick skillet over medium heat. Add the olive oil and let it heat for 30 seconds without letting it smoke.

  4. Cook the onion

Add the onion slices to the hot skillet. Cook them for 2 minutes, stirring with the wooden spoon, until they turn translucent.

Tip · If the onion starts to stick, turn the heat down a bit and add a tablespoon of water to the skillet.
  5. Drain the chickpeas

Open the can of chickpeas and tip them into the colander. Give them a quick rinse under cold water to get rid of the extra liquid.

  6. Mix the ingredients

In a large bowl, add the drained chickpeas, chopped tomatoes, cooked onion and half of the crumbled feta. Add the balsamic vinegar.

  7. Season the salad

Sprinkle with a pinch of salt and pepper. Toss gently with the wooden spoon to spread the flavors.

Tip · For a fresh touch, you can add a few basil or parsley leaves if you have some on hand.
  8. Serve with the rest of the feta

Divide the salad between two plates. Crumble the rest of the feta on top for a creamy touch.

And there you go, it's readyCheck off every step to celebrate.
