  1. Cook the quinoa

Rinse the quinoa under cold water in the colander to wash off the bitterness. In the saucepan, bring 250 ml of water to a boil with a pinch of salt. Add the quinoa, cover and let it cook over low heat for 12 minutes. Turn off the heat and let it rest, covered, for 5 minutes.

Tip · To keep the water from boiling over, leave a little room between the water level and the rim of the saucepan before covering.
  2. Prep the veggies

Peel the cucumber and cut it into small cubes. Wash and dice the tomato. Put them in the serving bowl.

  3. Drain the chickpeas

Open the can of chickpeas and tip them into the colander. Rinse them under cold water to get rid of the extra salt.

  4. Cut the smoked turkey

On the cutting board, cut the smoked turkey breast into cubes about the size of the chickpeas.

  5. Put the salad together

In the serving bowl, add the diced cucumber and tomato, the drained chickpeas, the smoked turkey and the drained, cooled quinoa. Mix gently with a fork.

Tip · For a crunchier salad, add the diced cucumber and tomato just before serving.
  6. Dress the salad

Drizzle the salad with the olive oil and balsamic vinegar. Add a pinch of salt and pepper. Mix again to spread the flavors evenly.

And there you go, it's readyCheck off every step to celebrate.
