  1. Sauté the onions

Peel and slice the onion. In the hot skillet with the olive oil, cook it over medium heat for 3 min until translucent.

  2. Add the bell peppers

Wash the bell peppers, pull out the seeds and cut them into strips. Add them to the skillet with the onions and cook for 5 min over medium heat, stirring.

Tip · For nicely browned merguez, don't press them down too much in the skillet, let them cook over medium heat so they cook evenly.
  3. Cook the merguez

Lightly prick the merguez with the tip of the knife so they don't burst. Add them to the skillet with the peppers and onions. Brown them for 4 min, turning them regularly.

  4. Stir in the tomatoes

Add the crushed tomatoes to the skillet, along with the paprika, salt and pepper. Stir well and let it simmer over low heat for 3 min.

  5. Make the couscous

While the skillet simmers, bring 300 ml of water to a boil in the saucepan. Off the heat, add the couscous, cover and let it puff up for 5 min.

Tip · If the couscous is too firm after puffing up, add a little hot water and stir quickly.
  6. Put the dish together

Drain the couscous in the strainer if needed. Divide it between the plates and spoon the merguez, peppers and onions on top.
