  1. Boil the water

    Heat about 6 cl of water (a small glass) with the pinch of salt until it boils.

  2. Hydrate the couscous

    Put the 60 g of fine couscous in the mixing bowl, pour the salted boiling water over it and cover with a plate. Let it plump up for 5 min, then fluff with a fork.

    Tip · Don't add more water than planned or the couscous gets gummy. Fluff it well with a fork before adding it to the mixing bowl.
  3. Rice the cauliflower

    Pulse the 400 g of florets in short bursts, or grate them, until you get grains about the size of couscous. Don't turn them into a puree.

    Tip · Pulse in short bursts and in two batches, otherwise the cauliflower at the bottom turns to mush while the top stays chunky.
  4. Prep the parsley and tomatoes

    Pick the leaves off the 20 g of parsley and chop them finely. Dice the 2 small tomatoes, getting rid of the extra juice.

  5. Cut the feta

    Cut the 60 g of feta into small cubes.

  6. Put the tabbouleh together

    Add the cauliflower, parsley, tomatoes and fluffed couscous to the mixing bowl. Pour in the 2 tbsp of lemon juice and the 2 tsp of olive oil, add pepper, then toss.

  7. Add the feta

    Gently fold in the feta cubes so they don't get mushy. Taste and adjust with a pinch of pepper if needed.
