  1. Prep the cooked quinoa

    Pour the 100 g of cooked quinoa into the mixing bowl and separate the grains with a fork. Let it cool while you prep everything else.

  2. Slice the chicken

    Cut the chicken breast in half horizontally to get two thin cutlets. Season both sides with salt and pepper.

  3. Grill the chicken

    Heat the skillet over medium-high heat with 0.5 tbsp of olive oil. Cook the cutlets 5 to 6 min per side, until the juices run clear and there's no pink left in the center (74 °C).

    Tip · Don't move the cutlets for the first 2 minutes, they'll release from the skillet on their own and brown better.
  4. Chop the veggies

    While the chicken cooks, dice the cucumber and tomato and add them to the mixing bowl. Finely slice the 5 g of mint and add it too.

  5. Crumble the feta

    Crumble the 50 g of feta by hand right into the mixing bowl.

  6. Dress the tabbouleh

    Squeeze the whole lemon and pour all the juice into the mixing bowl. Add a little salt (the feta is already salty), some pepper, and toss well.

    Tip · Taste before salting, the feta already brings plenty of salt.
  7. Let the chicken rest

    Take the chicken out of the skillet and let it rest for 3 min on a plate, then slice it into strips.

  8. Plate and serve

    Split the tabbouleh between two plates and lay the chicken strips on top.
