Step-by-step recipe

  1. Peel and chop the veggies

Peel the 2 carrots and the onion, then cut them into small dice. Rinse the split peas in a colander or right in the saucepan.

  2. Sauté the veggies

Heat 1 tbsp of olive oil in the saucepan over medium heat, then sauté the onion and carrots, stirring.

  3. Add the peas, water and bouillon

Add the 200 g of split peas, 1 l of water and the crumbled bouillon cube to the saucepan with the sautéed veggies, then bring to a boil over high heat.

  4. Simmer the peas

Turn down to low, half cover and simmer for 40 min, stirring now and then, until the peas mash easily.

Tip · Stir often, scraping the bottom of the saucepan, because the pea puree sticks fast and burns if the heat is too high.
  5. Cook the sausage

While the soup cooks, cook the 2 whole sausages in the skillet over medium heat, turning them, until they're browned and hot all the way through, with no pink left.

  6. Blend the soup

Without draining, blend the peas and veggies in their broth until smooth. Add a little water if it's too thick, then season with salt and pepper.

Tip · Blend in short bursts, keeping the blender under the surface to avoid scalding splashes, and add the water little by little to get the thickness you want.
  7. Toast the bread

Toast the 2 slices of whole wheat bread until golden.

  8. Serve

Slice the sausages into rounds. Ladle the soup into two shallow bowls, add the rounds on top and serve with the toast.
