Step-by-step recipe

  1. Prep the veggies

Peel the 2 carrots and the 2 onions. Cut the carrots into small dice and the onions into fine dice. Rinse the 130 g of split peas under cold water.

  2. Sauté the onions

Heat 1 tbsp of olive oil in the saucepan over medium heat. Sauté the onions for 3 min, stirring, without browning them.

  3. Start the soup

Add the carrots, split peas, the 2 bouquets garnis and 600 ml of water. Bring to a simmer, then turn down to low.

  4. Simmer the split peas

Half cover and cook over low heat for 40 min, stirring now and then. Add a little water if it sticks. The peas should mash with no effort.

Tip · Split peas stick to the bottom easily. Scrape the bottom with the wooden spoon as you stir and keep the heat low.
  5. Cook the sausages

While it simmers, heat 1 tbsp of olive oil in the skillet over medium heat. Cook the 2 sausages for 12 to 15 min, turning them, until browned with no pink left in the center (70 °C minimum).

Tip · Poke the sausages with the tip of the knife to check: the juices should run clear and the meat shouldn't be pink. If they brown too fast, turn down the heat and cover.
  6. Blend the soup

Take out the 2 bouquets garnis. Blend the soup, leaving a bit of texture, then season with 1 pinch each of salt and pepper.

  7. Slice and serve

Slice the sausages into rounds. Divide the soup between 2 bowls and lay the rounds on top.
