Step-by-step recipe

  1. Drain the lentils

Open the can of green lentils and tip them into a colander under cold water for a quick rinse.

  2. Cut the beet

Peel the cooked beet if it isn't already peeled, then cut it into small cubes, about 1 cm on each side.

  3. Crush the walnuts

Put the walnuts in a clean dish towel or between two sheets of parchment paper, then roughly crush them with a rolling pin or the bottom of a saucepan.

Tip · To keep the walnuts from sticking to the towel, give it a little shake after crushing them to collect all the pieces.
  4. Make the dressing

In a bowl, mix the balsamic vinegar, canola oil, mustard, a pinch of salt and a pinch of pepper. Whisk until smooth and well blended.

  5. Warm the lentils

Tip the drained lentils into a nonstick skillet over low heat. Let them heat for 2 minutes, stirring, to warm them gently without drying them out.

  6. Put the salad together

In a large bowl, mix the warm lentils, diced beet and crushed walnuts. Add the dressing on top and toss gently to coat everything.

Tip · For a crunchier salad, add the crushed walnuts just before serving instead of mixing them in right away.
