  1. Make the beet salad

    Drain the cooked beets and cut them into small cubes. Put them in a mixing bowl with the balsamic vinegar, half the olive oil, the salt and the pepper, then toss.

  2. Wash the lettuce

    Rinse the 100 g of lettuce and spin it really dry. Keep it in the fridge until you dress it at the end.

  3. Add the ham and cheese

    Take 4 slices of sandwich bread and lay a quarter of the ham (25 g) and a quarter of the raclette cheese (25 g) on each. Top each one with a slice of bread to make 4 croque-monsieurs.

  4. Butter the tops

    Spread half the butter on the tops of the 4 croque-monsieurs. You'll butter the other side after flipping, with the rest of the butter.

  5. Brown the first side

    Heat the skillet over medium heat. Lay the croque-monsieurs in buttered side down and cook them for 4 minutes until the bread is golden.

  6. Flip and finish cooking

    Butter the tops with the rest of the butter, flip the croque-monsieurs and cook them for another 4 minutes over low to medium heat, until the cheese is melted.

    Tip · Press the croque-monsieurs gently with the spatula and turn the heat down if the bread browns too fast, so the cheese has time to melt all the way through.
  7. Dress the green salad

    Drizzle the lettuce with the rest of the olive oil, add a pinch of pepper and toss gently.

  8. Plate and serve

    Cut the croque-monsieurs in half diagonally. Serve them with the green salad and the beet salad.
