  1. Cook the brown rice

    Rinse the 100 g of rice and put it in the saucepan with 250 ml of water and the pinch of salt. Bring to a boil, cover and cook over low heat for 35 min, until the water is absorbed.

  2. Thaw the shrimp

    Put the 200 g of frozen shrimp in a bowl of cold water while the rice cooks. Drain them and pat them really dry with a dish towel or paper towels.

  3. Cut the veggies

    Peel the mango and dice the 200 g. Cut the cucumber into half-moons. Thinly slice the fresh chile, taking out the seeds if you want it less spicy.

  4. Crush the peanuts

    Roughly crush the 2 tbsp of peanuts with the flat of your knife on the cutting board. Set them aside.

  5. Make the sauce

    In the small bowl, mix the 2 tsp of soy sauce, the lime juice and half the sliced chile.
