  1. Preheat the oven

    Turn the oven on to 200 °C with top and bottom heat. It'll be hot by the time you need to bake.

  2. Cook the potatoes

    Peel the 430 g of potatoes, cut them into 5 mm slices, then drop them into a saucepan of cold salted water. Bring to a boil and let them simmer until they're easy to pierce with the tip of a knife.

    Cut the 220 g of reblochon in half horizontally, like opening a book. Keep the rind on.

  7. Build the dish

    Pour the potato mix into the baking dish. Set both reblochon halves on top, rind side up.

  8. Bake until golden

    Bake at 200 °C until the cheese is fully melted and golden on top. Let it rest for 2 minutes before serving.
