    Turn the oven on to 200 °C, convection if you have it.

    Peel the 400 g of potatoes, cut them into 2 cm cubes and drop them into a saucepan of cold salted water. Bring to a boil, then let them simmer until a knife slides in easily.

  5. Drain the potatoes

  6. Mix the base

    In the skillet, mix the potatoes with the onion, bacon and the 50 g of crème fraîche. Add pepper, and taste before salting since the bacon and reblochon are already salty.

  7. Prep the reblochon

    Cut the reblochon (300 g) in half horizontally to get two rounds. Keep the rind on.

  8. Build the gratin

    Pour the mix into the baking dish. Set both reblochon halves on top, rind side up.

    Tip · Set the reblochon rind side up so it browns and protects the cheese, which then melts into the dish. Serve with a green salad and a squeeze of lemon or a splash of vinegar if you have some.
  9. Bake until golden

    Bake at 200 °C until the cheese is melted and nicely golden.
