  1. Preheat the oven

    Turn the oven on to 200 °C, convection if you have it.

  2. Cook the potatoes

    Peel the potatoes, cut them into 2 cm cubes and drop them into a saucepan of cold salted water. Count 12 to 15 min of cooking once it boils, then drain them.

    Tip · Poke a cube with the tip of the knife, it should go through without the cube falling apart. Drain well, otherwise the water makes the sauce soggy.
  3. Sauté the onion

    Slice the onion and sauté it in the skillet with 1 tbsp of olive oil over medium heat, until soft and translucent.

  4. Brown the bacon

    Add the smoked diced bacon to the skillet and brown it for 5 min over medium-high heat. No need for extra fat, it renders its own.

    Tip · Don't add much salt before tasting, the smoked bacon and the reblochon are already salty.
  5. Prep the reblochon

    Cut the reblochon in half horizontally, then cut one of the halves into pieces. Keep the other half whole, rind side up, for the top.

  6. Put the dish together

    In the baking dish, mix the potatoes, onion, bacon, thick crème fraîche, salt, pepper and the reblochon pieces. Set the reserved reblochon half on top, rind side up.

  7. Bake until golden

    Bake the dish at 200 °C until the reblochon is melted and the top is nicely golden.
