  1. Peel the potatoes

Peel the potatoes and cut them into thick slices, about 1 cm. Keep them in a bowl of cold water so they don't turn dark.

  2. Cook the potatoes

In a saucepan of salted boiling water, cook the potatoes for 15 min over medium heat. They should be tender but not mushy. Drain them and set aside.

  3. Brown the bacon

In a hot nonstick skillet with the olive oil, cook the bacon over medium heat for 5 min until golden. Add the sliced onion and cook for 2 more min.

Tip · To keep the bacon from giving off too much fat, lift it out of the skillet with a slotted spoon once browned and keep the oil to cook the onion.
  4. Preheat the oven

Preheat the oven to 200 °C (thermostat 6-7) while the potatoes cook.

  5. Mix it all together

In a baking dish, mix the drained potatoes, the cooked bacon and onion and the crème fraîche, then season with salt and pepper.

  6. Add the Reblochon

Cut the Reblochon in half horizontally. Lay one half on top of the mixture in the dish, rind side up. Keep the rest for the golden top.

Tip · If the Reblochon isn't crispy enough when it comes out of the oven, put it under the broiler for 2-3 min for a more golden top.
  7. Bake until golden

Bake the dish at 200 °C for 15 min until the cheese is bubbly and golden.

And there you go, it's readyCheck off every step to celebrate.
