  1. Peel the potatoes

Rinse the potatoes under cold water, then peel them with a knife. Cut them into slices about 0.5 cm thick.

  2. Cook the potatoes

Boil the potato slices in the saucepan of salted water for 10 minutes. Then drain them in a colander.

  3. Cook the onions

In the nonstick skillet, melt the butter over medium heat. Add the sliced onions and cook them for 5 minutes until translucent.

Tip · For really soft onions, slice them thinly and cook them over low heat without letting them burn.
  4. Add the turkey bacon

Add the turkey bacon to the skillet with the onions. Brown it for 5 minutes over medium heat, stirring often.

  5. Mix the cream and cheese

In a bowl, mix the crème fraîche with half of the Reblochon, cut into cubes. Season lightly with salt and pepper.

  6. Assemble the tartiflette

In a baking dish, layer the drained potatoes. Add some of the onion and bacon mixture between each layer. Add the cream mixture and smooth the top.

  7. Add the rest of the cheese

Scatter the rest of the Reblochon, cut into thin slices, over the top. Bake at 200 °C for 15 minutes until the cheese is nicely golden.

Tip · If the Reblochon isn't browning enough, put the dish under the broiler for 2-3 minutes, keeping an eye on it.
  8. Serve hot

Take the dish out of the oven and let it rest for 2 minutes before serving.
