  1. Peel the potatoes

    Peel the 0.6 kg of potatoes and cut them into 5 mm thick slices. Preheat the oven to 200 °C.

  2. Cook the potatoes

    Drop the slices into a saucepan of cold salted water, bring to a boil, then let them simmer until tender when poked with the tip of a knife. Drain them well.

    Tip · Start with cold salted water and don't let it boil hard, otherwise the slices break and turn into mash in the gratin.
  3. Slice the onions

    Peel the 2 onions, cut them in half, then slice them thinly.

  4. Caramelize the onions

    Melt the 15 g of butter in the skillet over medium heat, add the onions with a pinch of salt and let them brown, stirring often.

    Tip · Keep the heat at medium and stir often, the onions should get golden and soft, not burnt; if they stick, add a spoonful of water.
  5. Brown the bacon

    Add the 75 g of smoked diced bacon to the onions and cook over medium-high heat until golden. Take it off the heat and add pepper.

  6. Build the gratin

    Mix the potatoes with the onions, bacon and the 10 cl of crème fraîche in the dish. Stir half the cheese into the mix and spread the rest of the cheese over the top.

  7. Bake until golden

    Bake at 200 °C until the cheese is melted and nicely golden. Let it rest for 2 minutes before serving.
