Step-by-step recipe

  1. Preheat the oven

    Turn the oven on to 200 °C convection so it's hot when the dish goes in.

  2. Cook the potatoes

    Peel the 0.5 kg of potatoes, cut them into 1 cm slices and drop them into a saucepan of cold salted water. Bring to a boil, then let them simmer until a knife slides in easily, and drain.

    Tip · Start the potatoes in cold salted water so they cook evenly, and stop as soon as the knife goes in with no resistance: overcooked, they fall apart when you mix them.
  3. Slice the onions

    Peel the 2 onions and cut them into thin slices.

  4. Caramelize the onions

    Melt the 5 g of butter with the 1/2 tbsp of olive oil in the skillet over medium heat. Add the onions, salt lightly and cook them, stirring, until golden and soft.

    Tip · Stir often and turn down the heat if the onions brown too fast: they should caramelize slowly without burning. Serve with a green salad to balance the meal.
  5. Brown the bacon

    Add the 80 g of smoked diced bacon to the onions and cook over medium-high heat until nicely golden. Turn off the heat and add pepper.

  6. Prep the cheese

    Cut the reblochon in half horizontally to get two rounds. Keep the rind on.

  7. Build the dish

    Mix the potatoes, onions and bacon in the baking dish with the 8 cl of crème fraîche. Set both reblochon halves on top, rind side up.

  8. Bake until golden

    Bake at 200 °C until the cheese is melted and golden on top. Let it rest for 2 minutes before serving.
