Step-by-step recipe

  1. Peel the onion

Peel the onion and cut it into small dice. Set aside.

  2. Cook the onion

Melt 10 g of butter in the nonstick skillet over medium heat. Add the diced onion and cook for 3 min without letting it brown.

  3. Add the bacon

Add the lardons to the skillet and brown them for 3 min over medium heat, stirring.

  4. Stir in the rice

Add the basmati rice to the skillet with the lardons and onion. Mix well to coat the grains in butter.

  5. Add the water

Add 40 cl of boiling water to the skillet. Bring to a boil, then lower the heat to keep a gentle simmer.

Tip · Use boiling water so the rice keeps cooking steadily. If the water is cold, the rice will absorb it too slowly and turn mushy.
  6. Cook the rice

Cook the rice over low heat for 15 min, stirring now and then so it doesn't stick. Add a little water if needed.

  7. Add the peas

Stir the frozen peas into the skillet. Cook for 5 more min over low heat.

Tip · If the peas aren't tender yet after 5 min, cook 2-3 min longer at most so the rice doesn't get too soft.
  8. Stir in the cream

Off the heat, add the crème fraîche and mix well for a creamy texture. Taste and season with salt and pepper if needed.

  9. Sprinkle with nutmeg

Grate the nutmeg right over the risotto and give it a quick stir.

  10. Serve right away

Divide the risotto between two warm plates and serve immediately.
