Step-by-step recipe

  1. Rinse the rice

Put the 200 g of basmati rice in the colander and rinse it under cold water until the water runs almost clear.

Tip · Rinse the rice until the water runs almost clear, or it'll stick and won't stay in separate grains.
  2. Cook the rice

Put the rice in the saucepan with 300 ml of water and 1 pinch of salt. Bring to a boil, then cover and cook over very low heat 12 min.

  3. Chop the onion

While the rice cooks, peel the onion and dice it small. Crack the 2 eggs into the bowl and beat them with a fork with 1 pinch of pepper.

  4. Let the rice rest

Turn off the heat and leave the rice covered, without lifting the lid, 10 min. Use that time to get the rest ready.

  5. Cook the bacon

Heat 1 tbsp of olive oil in the skillet over medium-high heat. Add the 150 g of diced bacon and the onion, and cook until golden.

  6. Add the peas

Tip the 200 g of frozen peas straight into the skillet, no need to thaw them. Stir and cook over medium heat until heated through.

  7. Cook the eggs

Push everything to the side, pour the beaten eggs into the open space and stir until fully set, with nothing runny left. Then mix them in with the rest.

  8. Toss and season

Fluff the rice with a fork and add it to the skillet with the 2 tbsp of soy sauce. Stir-fry over high heat until everything is hot and well coated.

Tip · Taste before adding any salt: the bacon and soy sauce are already salty.
