  1. Cook the basmati rice

    Rinse the 160 g of rice, then drop it into a saucepan of salted boiling water. Cook 10 min, drain and spread it out in a bowl so it cools and dries.

    Tip · Rice that's still hot and wet sticks and turns to mush in the skillet. Let it cool and dry out well before frying it.
  2. Cut the veggies and chicken

    Peel the 80 g of carrots and dice them small. Cut the 160 g of chicken breast into cubes of about 1 cm.

  3. Sear the chicken

    Heat half the olive oil (4 cl) in the skillet over high heat. Cook the chicken 5 to 6 min, stirring, until golden and cooked through with no pink left. Season with salt and pepper, then set it aside on a plate.

  4. Cook the carrots and peas

    In the same skillet, pour in 2 cl of olive oil. Cook the carrots 3 min over medium-high heat, then add the 80 g of frozen peas and cook another 3 min.

  5. Scramble the eggs

    Push the veggies to the side and pour the remaining 2 cl of olive oil into the middle. Beat the 2 eggs in a second bowl with a fork, pour them into the skillet and stir 1 to 2 min until fully set.

  6. Add the rice and chicken

    Add the cooled rice and the chicken you set aside to the skillet. Stir-fry 3 min over high heat, stirring nonstop.

  7. Season and serve

    Pour in the 8 cl of soy sauce, stir 1 min, taste and add pepper if needed. Serve piping hot.
