  1. Peel the sweet potatoes

Peel the sweet potatoes and cut them into small cubes, about 1.5 cm. Put them in the bowl.

  2. Brown the bacon

In the nonstick skillet over medium heat, cook the smoked lardons with no added fat for 3 to 4 minutes, until golden. Lift them out with the wooden spoon and set them aside in the bowl.

  3. Cook the sweet potatoes

In the same skillet, add the olive oil and cook the sweet potato cubes over medium-low heat for 10 minutes, stirring now and then. Salt lightly.

Tip · For really tender sweet potatoes without too much oil, cover the skillet with a lid for the first 5 minutes of cooking.
  4. Add the onion and garlic

Peel and finely slice the onion and garlic. Add them to the sweet potatoes and cook for 2 minutes, stirring.

  5. Cook the spinach

Add the fresh spinach to the skillet and let it wilt over high heat for 2 minutes, stirring. Season with salt and pepper.

  6. Bring it all together

Put the bacon back in the skillet with the sweet potatoes, spinach, onion and garlic. Add the light crème fraîche and mix well. Let it heat through for 1 minute over low heat.

Tip · If you want it creamier, stir in a little more cream at the end without letting it boil.
  7. Serve hot

Taste and adjust the seasoning if needed. Serve right away.
