  1. Peel the pumpkin

Cut the pumpkin in half from top to bottom, then remove the seeds and peel with a knife. Cut the flesh into 2 cm cubes.

  2. Cook the onion

Finely chop the onion. Melt the butter with the olive oil in the saucepan over medium heat. Add the onion and cook for 3 min without browning.

Tip · To keep the onion from burning, turn down the heat if needed while it cooks.
  3. Add the pumpkin

Add the pumpkin cubes to the saucepan with the onion. Season lightly with salt. Cook for 5 min, stirring now and then.

  4. Add water and cook

Add 50 cl of hot water, bring to a boil, then lower the heat. Let it simmer, covered, for 20 min, until the pumpkin is tender.

  5. Cook the lardons

In the nonstick skillet over medium heat, cook the lardons for 3 min with no added fat. Set aside.

  6. Blend the soup

Blend the soup with an immersion blender until smooth. Taste and adjust the seasoning with salt and pepper.

Tip · If the soup is too thick, add a little hot water to loosen it.
  7. Make the croutons

Preheat the oven to 180 °C. Cut 4 thick slices of bread and brush them with a little olive oil. Bake for 8 min, until golden.

  8. Serve the soup

Divide the soup between two bowls. Top each one with the lardons, a spoonful of crème fraîche and a crouton.
