    Give the 150 g of mushrooms a quick rinse, pat them dry and slice them thin. Rinse the 100 g of spinach and drain it well.

    Put the skillet back over medium-low heat and pour in the beaten eggs. Spread the mushrooms and spinach over the whole surface.

  6. Cook the omelet

    Cook over low heat, loosening the edges with the spatula, until the bottom is set and the top is barely runny.

  7. Add the feta

    Crumble the 50 g of feta over one half of the omelet. Cover the skillet so the top finishes cooking through, with no runny egg left.
