  1. Prep the veggies and bread

    Peel and slice the 2 onions, peel the 2 carrots and dice them, then cut the smoked bacon into small pieces. Cut the 8 slices of country bread into cubes.

  6. Blend the soup

    Blend everything right in the saucepan, cooking liquid included. Add a little hot water if it's too thick.

  7. Season and serve

    Stir in the crème fraîche, taste, and adjust the salt and pepper. Serve in two soup bowls with the croutons on top.
