  1. Bring the water to a boil

    Fill the saucepan with water, salt it and bring it to a boil over high heat.

  6. Bring the sauce together

    Pour the egg mixture over the pasta, still off the heat, stirring well. Then put it back over very low heat for 1 to 2 min, stirring nonstop, until the sauce coats the spoon, without boiling.

    Tip · If the sauce starts to get grainy, pull the skillet off the heat right away and add a spoonful of pasta water while stirring hard.
  7. Adjust and serve

    If the sauce is too thick, loosen it with a little of the pasta water you saved, then taste and salt if needed. Divide between two plates and sprinkle with the rest of the Parmesan.
