  1. Cook the bulgur

Bring 300 ml of water with the pinch of salt to a boil in the saucepan, pour in the 150 g of bulgur, cover and turn off the heat. Let it plump up until all the water is absorbed.

  2. Prep the veggies

Break the half head of broccoli into small florets and rinse them. Peel and finely mince the garlic clove.

  3. Sauté the broccoli

Heat half the olive oil in the skillet over medium-high heat and sauté the broccoli for 5 to 6 minutes, stirring, with a tablespoon of water halfway through to soften it. Set the broccoli aside in a bowl, then cook the patties in the same skillet.

Tip · Don't crowd the skillet and stir often so the broccoli browns without burning.
  4. Cook the patties

Shape 2 patties with the 250 g of meat, then season with salt and pepper. Cook them in the skillet with the rest of the oil, 4 minutes per side over medium-high heat, with no pink left and at least 70 °C in the center.

Tip · Don't press the patties with the spatula while they cook, you'd lose the juices. Make sure the inside isn't pink anymore.
  5. Season and toss

Put the broccoli back in the skillet with the garlic and the 2 tablespoons of soy sauce. Heat for 1 minute, stirring. Fluff the bulgur with a fork.

  6. Plate it up

Split the fluffy bulgur between two plates, add the soy sauce broccoli and set a patty on each. Add pepper to taste.

And there you go, it's readyCheck off every step to celebrate.
