Step-by-step recipe

  1. Cook the rice

Rinse the basmati rice in cold water until the water runs clear. Tip it into the saucepan with 500 ml of cold water, add a pinch of salt and bring to a boil. Turn the heat down, cover and cook for 12 min over low heat.

Tip · For nice separate grains, don't stir the rice once it's boiling.
  2. Prep the veggies

Seed the bell peppers and cut them into strips. Break the broccoli into florets. Thinly slice the red onion and mince the garlic. Keep everything in the bowl.

  3. Cook the chicken

Cut the chicken breasts into 2 cm cubes. In the hot, dry skillet, brown them for 4 min over medium heat without stirring. Season lightly with salt and pepper, then set aside on a plate.

  4. Stir-fry the veggies

In the same skillet, add the olive oil and cook the onion and garlic for 2 min over medium heat. Add the bell peppers and broccoli and stir-fry for 5 min, stirring often.

  5. Season the veggies

Pour the soy sauce over the veggies, stir well and let it caramelize for 1 min over high heat. Add the chicken back in and mix it all together.

Tip · If you want more crunch, add the veggies 1 min before the chicken is done.
  6. Serve the bowls

Split the cooked rice between two bowls. Top with the veggies and chicken. Serve right away.
