  1. Prep the veggies and aromatics

Cut the broccoli into small 2 cm to 3 cm florets. Peel and finely mince the garlic and ginger, then slice the chiles (take out the seeds if you want less heat).

  2. Boil the water

Pour about 1 l of water into the saucepan, salt it lightly and bring it to a boil over high heat while you keep going with the next steps.

Tip · Start the water before chopping the rest if you want to save time, it takes about 5 min to boil.
  3. Cook the rice noodles

Drop the 120 g of noodles into the boiling water and cook them according to the package, 3 to 4 min. Drain them in the colander, then drizzle them with the sesame oil so they don't stick.

  4. Sear the ground beef

Heat the olive oil in the wok over high heat. Add the 240 g of beef and break it up, stirring, until there's no pink left at all, it should be cooked through.

  5. Add the aromatics

Stir the garlic, ginger and chiles into the beef. Stir for 1 min to bring out their flavor without burning them.

  6. Cook the broccoli

Add the broccoli and 2 tbsp of water to the wok, cover and let it cook for 2 min over high heat. Uncover and stir for 1 more min until tender but crunchy.

Tip · Small florets of the same size cook evenly, and the water you add before covering makes steam that cooks them through without making them soft.
  7. Add the noodles and season

Add the drained noodles and the soy sauce to the wok, then toss for 1 min to heat everything through. Taste and adjust with salt and pepper.

And there you go, it's readyCheck off every step to celebrate.
