  1. Prep the chicken

Cut the chicken breasts into small pieces, about 2 cm. Peel and finely chop the garlic and ginger.

  2. Cook the rice

Rinse the basmati rice under cold water until the water runs clear. In the saucepan, bring 30 cl of water to a boil with a pinch of salt. Add the rice, turn the heat down and cook, covered, for 12 min. Turn off the heat and let it rest, covered, for 5 min.

Tip · For perfect rice, never lift the lid while it cooks. Use a timer so you don't go past 12 min.
  3. Brown the chicken

In the hot wok or skillet with the sunflower oil, brown the chicken pieces over high heat for 5 min until golden. Set aside in a bowl.

  4. Cook the veggies

In the same wok, cook the garlic and ginger for 30 seconds. Add the carrots cut into thin slices, the broccoli in small florets and the bell peppers in strips. Stir-fry over high heat for 5 min, stirring often.

  5. Put the stir-fry together

Return the chicken to the wok with the veggies. Add the soy sauce and season lightly with salt and pepper. Stir-fry everything over high heat for 3 min to blend the flavors.

Tip · If the wok smokes too much, turn the heat down a little so nothing burns.
  6. Serve

Divide the rice among the plates and top with the chicken and veggie stir-fry. Serve hot.
