Turn the oven on to 200 °C, convection if you have it.
Cut the sweet potatoes
Peel the 0.6 kg of sweet potatoes and cut them into 2 cm cubes. Cut the 300 g of broccoli into small florets.
Season the sweet potatoes
In the mixing bowl, toss the sweet potatoes with 1 tbsp of olive oil, the paprika, salt and pepper. Spread them on the baking sheet and put them in the oven.
Tip · Spread the sweet potatoes in a single layer without piling them up, or they steam instead of roasting.
Roast the sweet potatoes solo
Let the sweet potatoes roast at 200 °C, flipping them halfway through.
Sear the chicken breasts
Season the 0.4 kg of chicken breasts with salt and pepper. Heat the skillet over medium-high with 1/2 tbsp of olive oil (the rest of the oil), then lay in the chicken and brown it without touching it, 3 min per side.
Tip · Let the skillet get really hot before adding the chicken and don't move it while it sears, or it sticks and won't brown.
Move the chicken to the oven
Pull out the baking sheet, push the sweet potatoes to the side and set the browned breasts on it. Back into the oven at 200 °C until cooked through with clear juices (74 °C).
Steam the broccoli
Meanwhile, bring a little water to a boil in the saucepan and steam the florets with the lid on until tender but still bright green.
Check and serve
Cut the biggest breast in half: no pink should be left and the juices should run clear. Serve the chicken with the sweet potatoes and broccoli.
And there you go, it's readyCheck off every step to celebrate.
