Turn the oven on to 200 °C, convection if you have it.
Prep the sweet potatoes
Peel the 600 g of sweet potatoes and cut them into cubes of about 3 cm. Put them in the baking dish with half the olive oil (1 tbsp) and a pinch of salt.
Season the thighs
In the mixing bowl, toss the 4 thighs with the rest of the oil (1 tbsp), the paprika, salt and pepper. Rub the skin well to spread the spices.
Get the sweet potatoes in
Put the dish of sweet potatoes in the oven on its own at 200 °C. They get a head start while you handle the rest.
Add the chicken
Pull out the dish, push the sweet potatoes to the sides and lay the 4 thighs in, skin side up. Back into the oven at 200 °C for 40 min, stirring the sweet potatoes halfway through.
Tip · Don't cram the thighs against the sweet potatoes. Leave a little room so the skin turns golden instead of going soft from the steam.
Cook the green beans
About 10 min before the chicken is done, trim the 400 g of green beans. Drop them into a saucepan of salted boiling water and cook 8 to 10 min, then drain.
Tip · Run the beans under cold water after draining if you're not serving them right away, they'll stay nice and green.
Check for doneness
Poke a thigh at its thickest part: the juices should run clear and the meat shouldn't be pink (74 °C inside). If it's not there yet, give it 5 more min and check again.
Plate and serve
Divide the green beans, sweet potatoes and 2 thighs per plate. Add pepper to taste.
And there you go, it's readyCheck off every step to celebrate.
